30-Minute "RIEU PaStA"! Rieu is a Vietnamese crab and shrimp paste. Very rich and savory tasting! Generally used in a seafood tomato noodle soup. This is my original fusion pasta creation.

Head out to two different schools, work a full teaching day, see lash clients, cooking dinner and plan/grade lessons. So needless to say, I survive on planning 30-minute meals! Ingredients
1 14oz Can Crab/Shrimp Rieu Pasta
1lb Spaghetti Pasta (1 Box)
1 tbsp Tomato Paste or Sun Dried Tomatoes
1lb Shrimp
2 Cups Fried Tofu
3-5 Roma Tomatoes
4 Garlic Cloves Minced
½ Large Red Onion or 1 Small
4 tbsp Olive Oil
1 tsp Salt
Spring Onions & Cilantro to Garnish
Method
Prepare pasta according to package instructions. I love mine al dente, so I cook for 12-minutes.
While pasta is cooking, chop tomatoes, red onion and mince the garlic.
On medium-high heat, sauté onion, tomato paste or sun dried tomato and garlic in olive oil to begin the sauce.
Add tomatoes, rieu paste, and salt.
Add shrimp and tofu to sauce. Cook for 3-5 minutes.
When shrimps are cooked (they’ll curl up), add cooked pasta and mix well.
Plate and garnish with spring onions and cilantro. Bon Appétit!
