I love the crunchy texture of lotus root! It's truly amazing what nature allows us to consume. Lotus root comes from the stem of the lotus flower and can grow up to 4 feet tall. It's considered to be a cooling food that restore's the body's balance in Asian countries. One can find lotus roots in the fresh vegetable or frozen section in Asian markets. It is a versatile vegetable that can be cooked in sauté dishes, added to soups or act as a side dish to hotpot meals.
Ingredients
2 quarts Chicken Stock
1 Whole Lotus Root
1 Bag of Pork Meatballs (or any other meats)
1 tsp Ginger Minced
1 tsp Garlic Minced
1 tsp Salt or Salt to Taste
Method
On medium heat add chicken stock, ginger, garlic, salt and meatballs to the soup pot.
Wash, peel and slice lotus root. Add lotus to the soup pot. Let it simmer for 15-minutes. (I actually used my leftover hotpot fish ball with roe because that’s what I had! Substitute with what you can find or have.)
Serve with rice! Bon Appétit!
