Instant Pot Leftover Turkey Phở

Making leftovers unforgettable! Turkey phở gives a whole new meaning and flavor palette to a bird that's traditionally dry and gamey!

What do you do with TURKEY leftover from Thanksgiving? You make TURKEY PHO/Phở Gà Tây! It's quite tasty and delicious in the hot steamy broth. The phở broth hydrates and moistens the turkey meats making them tender to every bit. I didn't have anymore basil growing in my garden this time of the year cause it's too cold. But my mints and perilla are flourishing. Still had a bit of scallions growing slowly and had cilantro in the fridge. So I used what I had and I have to say, the perilla really compliments the gamey flavor of the turkey meat!


{Ingredients}

{Broth}

  • Turkey bones or two wings or one turkey drumstick

  • 6-quart water (8 quart instant pot) or stovetop

  • 1/2 cup chicken/mushroom bouillon

  • 2 tbsp salt + 1 tsp

  • 1 stick palm sugar or 1/4 cup rock sugar

  • 1 2-inch roasted ginger piece halved

  • 1 roasted yellow onion

  • Pho Spice Pouch (Mix together 1-teaspoon each of star anise, fennel seeds, whole cloves, coriander seeds, 1 cardamon seed, and 1-inch cinnamon bark) Roasted or microwaved 20-seconds

{Other Ingredients}

  • slice or shredded turkey meat

  • wide or thin flat rice noodles (fresh or dry)

  • bean sprout

  • cilantro

  • scallion

  • basil

  • perilla

  • mints

  • chili

  • limes/lemon wedges

{Method}

  1. In an 8-quart pot or pressure cooker, add roasted/broiled yellow onion, ginger, turkey bones, sugar and salt.

  2. For instant pot, add hot boil or room temperature water and roasted phở seasoning pouch. Secure lid, set mode to "soup/stew" for 45-minutes. Quick release and add chicken bouillon. For stovetop, add room temperature water and bring to a boil. Then lower heat to simmer and add roasted spice phở pouch. Simmer on stovetop for 2-hours minimum. Adding a quart of water per-hour of simmering. Add chicken bouillon right before serving.

  3. Prepare fresh herbs/veggies.

  4. Shred or slice up leftover turkey meat.

  5. Prepare dry rice noodles according to package. If using fresh noodles, bundle them up and dip into boiling water for 30-seconds.

  6. Place cooked noodles into serving bowls, top with turkey and fresh herbs! Serve immediately while soup is hot.
