Instant Pot Soy Sauce Chicken

Simply delicious and easy to make. Goes well with rice or as a noodle soup during cold nights!

Soy sauce chicken, 豉油雞 pronounced "si yau gai" is a popular Cantonese dish served in many local Hong Kong style delis. It is a dish composed of chicken, soy sauce, and dry spices. The soy sauce chicken has deep savory flavors with hints of anise and cinnamon. It is simple but delicious and can be eaten with hot steamy rice or noodles with extra chicken broth.


Don't be deceived by the list of seasoning ingredients. This is one of the easiest and quickest dishes to make and I'm making it even faster in my 8-quart Instant Pot! The chicken comes out so tender and delicious!


To enjoy as a noodle soup, just add 4-6 cups of chicken broth or bouillon water mixture to the sauce. Warmup and ladle over fresh rice noodles and garnish with red chili and scallions.

{Ingredients}

  • 1 chicken or 12 drumsticks

  • 4 tbsp olive oil

  • 5 smashed garlic cloves

  • 1 1-inch ginger piece sliced

  • 4 star anise

  • 1 cinnamon bark

  • 1/4 tsp fennel seeds

  • 1/4 tsp dried cloves

  • 4-6 scallions chopped (2-inch pieces), plus extra for garnish

  • 1 cup soy sauce (reg. soy sauce)

  • 2 tbsp dark soy sauce

  • 1/2 cup water + 1/2 cup water

  • 1/3 cup packed brown sugar

  • 1 tbsp sesame oil

  • 1/2 cup Shaoxing cooking wine

  • 2 bay leaves

  • Thai chili (optional)

  • 4 - 6 cups chicken broth if making soup base for noodles (optional)

  • Rice or Noodles

{Method}

  1. Prepare your rice if consuming with rice.

  2. Set the Instant Pot to sauté mode. Add olive oil, garlic, ginger, star anise, cinnamon bark, fennel seeds, dried cloves, and scallion bottoms. Sauté for 2-minutes to bring out flavors from spices. Stir often to prevent burning.

  3. Add regular soy sauce, dark soy sauce, 1/2 cup water, brown sugar, sesame oil, Shaoxing cooking wine, and bay leaves. Allow everything to warm up. Stir to incorporate spices.

  4. Add in whole chicken or 12 drumsticks. Spoon sauce over chicken pieces.

  5. Secure Instant Pot lid with vent open. Once lock, close the vent. Set mode to Meat/Stew for 20-minutes. Quick-release.

  6. If a darker color is desired on the chicken, flip them, close lid, and let soak for 10-minutes. They will stay warm in the Instant Pot so no settings need to be on.

  7. There you have it a quick simple soy sauce dish to go with your hot steamy rice!

  8. Noodle option: Remove chicken from the Instant Pot. Turn on sauté mode add 4 to 6 cups chicken broth. Salt to taste. Now you have a soup base for noodles.
